Cauliflower Jalapeno Poppers

Are you ready for some football?! The NFC championship game was last Sunday and my boys almost (don’t remind me) held their own against the Seahawks. Yes, I’m a born and raised SoCal Packers fan and no, my dad or super cool uncle doesn’t cheer them along with me. When I was younger I figured out exactly one thing about sports—no one likes a band wagoner. So at some single-digit age I decided to arbitrarily pick teams I’d be rooting for for the next few decades and things just sort of stuck.

I’ll be honest, I like a lot of stuff more than football and snacks are definitely one of them. Thanksgiving is not my thing (weirdo, I know) so Super Bowl is my all-time favorite eating holiday of the year. I will not be healthifying my entire menu two weeks from now because that’s just un-American but I will sneak in some semi-guilt-freeness where I can.

And these poppers are a super easy way to do it. Using the cauliflower bumps up the volume of the filling without adding calories or fat or sacrificing flavor. Shhh, don’t even tell your fellow fans, no one needs to know these aren’t as indulgent as they taste. Seriously, no one wants to know they are being fed cauliflower one the biggest junk food day of the year, am I right?

Cauliflower Jalapeno Poppers

  • 12 jalapenos, tops and seeds removed
  • 1/2 cup caulimash
  • 4 oz cream cheese, softened
  • 1-2 cloves garlic, pressed
  • 12 slices bacon

Cream together cauliflower puree, cream cheese and garlic. Pipe or spoon the filling equally into each jalapeno. Wrap each pepper with one slice of bacon, being sure to cover the open end of the pepper, and secure with toothpicks.

Bake at 425 degrees for 15 minutes. Flip and bake for another 10-15 minutes until bacon is crispy. Let sit for 5 minutes before serving.
